Honey bites


Honey is a good thing, you can eat it or call your loved ones by it.
So why not make use of this natures goodness?
 I made this recipe on the perfect occasion of Raksha Bandhan. My brother and other guests who visited my place had splendid moments celebrating the festival and relishing the honey biscuits.
Also honey and nuts are favorites of the kids, so this makes a very good option for their snack box. These biscuits are very good source of vital nutrients for them.
And you can store these biscuits in airtight container for at least one week.

So here's the recipe...

Ingredients :

STEP 1.
For dough - 
flour                   200 gms
butter                 100 gms
powder sugar    20 gms
baking powder  pinch
chilled water      to bind

Filling - 

STEP 2.
butter                 100 gms
powder sugar   100 gms
flakes cashews  100 gms
honey                 15 ml
liquid glucose    10 ml

Method :
1. Prepare a dough by mixing all the dough ingredients together and keep it in a refrigerator for 15 minutes.
2. For filling , in a pan add butter, sugar, honey and glucose.
STEP 3.
3. Cook all the ingredients an the slow flame till it blends and thickens.
4. Add cashews in the ends and mix well.
5. Roll out the dough with the rolling pin and spread it on the flat tray.
6. Blind bake the dough in pre-heat oven at 170 C for 15 minutes.(half done).
7. Remove the tray and spread the thin layer of the honey and cashew filling on it.
STEP 4.
8. Again bake the dough with the filling at 150 C for minutes.
9. Cool the biscuit and cut into required shapes.
10. Can store in air tight container for 3-4 days.

Sunday brunch :)

Everybody knows the value of Home made food. But can we really keep ourself at bay from burgers, pizza for a long time? 
To put an end to this dilemma, I'll show you to make good quality homemade croissants, which are buttery, flaky and too yummy to gratify your cravings. 

This recipe of mine comprises of easily available ingredients. It takes a little bit of time, efforts and patience to make Croissants, but are totally worth it. 

So will not waste anymore time and start with the recipe and procedures. 


Ingredients:

flour                   250 gm

salt                    1/2 tsp
icing sugar          55 gm
fresh yeast         15 gm
milk                   70 ml
butter                120 gm
egg                    1 no.
vanilla essence    1/2 tsp
egg wash            for brushing

Method:


1. sieve the flour and add yeast, egg, vanilla essence and make a soft dough with the milk and water.


2. Rub salt and little of butter together and add in the soft dough for nourishment.
3. Round it up and keep it cover under a damp cloth.
4. When it double in size, knock back and roll it out into a big circle.
5. Apply the cream margarine all over the rolled out dough.


6. Cut it into 3 uneven portions. Roll the smallest portion and place it on the second largest portion, roll it and place it on the largest portion. Then seal the sides of the rolled  dough and wrap up in the damp cloth.











7. Keep it in the freezer for 20 minutes or till the fat solidifies.
8. Remove and roll it in the rectangular and turn it in the shape of croissants. 







9. Place them on the grease tray and cover it with the damp cloth till it becomes light to touch.




10.  Apply egg wash and bake at 220 C for 15 minutes.
      (Egg wash - 1 no. egg and 10 ml water mix together)









11. Apply sugar syrup when hot. (syrup should be warm)
     (sugar syrup - equal quantity of water and sugar boil together)

Cakeholics


My Mom & Dad's 25th wedding anniversary. A really big day of celebration for them and as well as for me.

To add up to the joy I decided to make use of my baking skills and give them a surprise by making a 2 tier chocolate cake.
I worked hard to accomplish my job to perfection and later, to celebrate the occasion with my dear parents.

So here I am sharing this joyful journey of making 2 tiers chocolate cake with you all.

9. Final presentation with handmade roses.

Rich Walnut Pie

Ingredients:
For pastry:
Flour         110 gms
Icing sugar 10 gms
Butter       60 gms
Cold water to mix

For filling:
Walnuts       80 gms
Egg yolk        3 nos
Butter         50 gms
Sugar          50  gms
Brown sugar 50 gms
Milk            100 ml

  Method:

  For pastry:
1.  Sieve flour and mix icing sugar in it.
2. Rub the fat into it until it resemble like a bread crumb.







  

3. Mix with cold water to form a dough then roll on the slab and line it in the tart tin.










4. Bake at 150 C for 15 to 20 minutes till it is half bake.

 









For filling: 
1. As you complete with the tart base, in a pan mix butter, sugar, brown sugar and blend well.










     2.     Slowly incorporate the yolk in the mixture with the milk.
     3.    Put the pan on a slow fire till thick.
4. Stir in flaked walnuts and place the mixture in the half bake tart.
5. You can decorate the tart with the remaining strips of pastry and apply egg wash.









 6. Further, put it for baking at 150 C for 45 minutes.
